CHOC CHUNK COOKIES
(with gluten-free/dairy-free options)
1/2 cup caster sugar
1 teaspoon vanilla
125 g butter OR dairy-free spread, melted
1 1/2 cups gluten-free OR regular self-raising flour
1/2 cup desiccated coconut
200 g standard OR dairy-free dark chocolate, 1/2 block chopped, remaining half block broken into large pieces
1 Preheat oven 180C/160C fan-forced. Line 2 large baking trays with non-stick baking paper.
2 Mix egg, sugar and vanilla together with a wooden spoon until well combined. Stir in butter. Then, stir in flour, coconut and the chopped chocolate until combined.
3 Roll heaped dessert spoons of the mixture into rounds then place onto trays, about 5 cm apart, flatten down slightly and press the large pieces of chocolate into the centre of each.
4 Bake 20-25 minutes or until light golden. Cool on trays or eat while hot and chewy!!
- you can use 1 small packet "choc-bits" (white, milk or dark) instead
- make smaller cookies (walnut sized rounds) and bake 18-20 minutes instead.
- use a soy-free gluten-free flour for best results (woolworths 'select' packet is best).
